South Indian recipes

Sweet Kozhukattai

Ingredients:

1. Rice flour 1 cup
2. oil 1 tsp
3. Water
4. Salt to taste
5. Grated coconut 4 cups
6. powdered jaggery 2 cups

Method:

Mix the rice flour and water, put one tsp oil and pour the batter into the pan slowly, and stir continuously so that no lumps are formed, and cook on iow heat. Once the batter is cooked, remove the pan from heat and keep it aside.

Add powered jaggery to the grated coconut in a frying pan and cook in low flame till it becomes a viscous syrup, keep aside till it cools. Mould the dough in the form of cups or in the circular form. Now fill these cups or circles with the viscous syrup and close the edges to make the kozhukattais. Steam these kozhukattais in a pressure cooker. Serve it hot.


Salt kozhukattai

Ingredients:

1. Rice flour 1 cup
2. oil 3tsp
3. Water
4. Salt to taste
5. Urad dal 1/2 cup
6. Green chilli- 1
7. Mustard 1/2 tsp
8. Asafoetida a pinch
9. Coriander and curry leaves for garnishing

Method:

Covering dough:
Mix the rice flour and water, put one tsp oil and pour the batter into the pan slowly, and stir continuously so that no lumps are formed, and cook on iow heat. Once the batter is cooked, remove the pan from heat and keep it aside.

Soak urad dal in water for 15-20mins. Drain the water and grind it with green chilli. The mixture should be coarse and not finely grinded one. Add 1tsp of oil in a pan and mustard. Oncethe mustards spurts add the grind urad dal and fry for 5-10mins(till the stickiness goes). Add salt and a little asafoetida. Once fried, remove from flame and leave it to cool.
Take a small amount of covering dough and roll it into small balls. Flatten the balls and add the fillings. Join the edges and keep the raw kozhukattais in an idli stand and steam it. Serve hot.
